As the season changes, chef Judy Joo shares her autumn reset, pairing nourishing recipes with an advanced reparative skincare ritual.

Autumn has a way of changing the rhythm of everyday life. After the travel, longer days and spontaneity of summer, routines return, temperatures drop and what we reach for in both the kitchen and our skincare starts to change.
For chef Judy Joo, cooking with the seasons means choosing ingredients when they are at their best. This autumn, she has created two recipes exclusively for 111SKIN, as well as sharing the reparative skincare ritual she turns to as her complexion adjusts to the colder months.

Together, they offer a reset from the inside out, pairing food that nourishes with targeted skincare designed to restore and rejuvenate.

Judy’s approach to a new season

Judy tends to notice the arrival of cooler weather early. The first hint of a chill, and I’m reaching for cashmere, pulling out the thicker duvet and craving anything that warms me from the inside out,” she says.


That means steaming mugs of herbal tea and fresh ginger, more time spent cooking at home and dishes suited to darker evenings. “Autumn makes home feel particularly inviting to me,” she says. “A warm kitchen, something simmering on the stove, and absolutely no compelling reason to go back outside.”


Her skincare changes too. “Autumn is when my skin starts becoming considerably more demanding,” Judy explains. “There’s less of that easy summer suppleness, and suddenly my face seems to drink up whatever I put on it.” She responds by reaching for richer textures and layers of moisture that leave her complexion feeling cushioned. Or, as she puts it, autumn turns her into “a bit of a professional cocooner”.

Autumn, served by Judy

Eating with the seasons has shaped Judy’s cooking since childhood. Growing up, her mother simply cooked according to “what looked good, what was fresh and what was meant to be eaten at that moment”. It is still how Judy approaches food today.


Her two recipes for 111SKIN capture different sides of this time of year. A warming Spiced Butternut Squash Soup celebrates deeper flavours and autumn produce, while her morning Matcha Latte is deliberately simple. “Not everything needs twelve ingredients,” she says.

Recipe 1: Soy Milk Matcha Latte

Judy’s morning matcha is “practically non-negotiable”. Matcha contains naturally occurring green-tea polyphenols, including catechins such as EGCG, while unsweetened soy milk adds creaminess and plant protein.


Mostly, though, she drinks it because she loves it. “Before emails, before meetings, before the day has had an opportunity to misbehave, there is matcha,” she says.

Ingredients:

  • 1 teaspoon good-quality matcha
  • 2 tablespoons hot water, around 80°C
  • 200ml unsweetened soy milk
  • Honey or maple syrup, optional


Method:

  1. Sift the matcha into a mug or small bowl. Add the hot water and whisk vigorously until smooth and lightly frothy.
  2. Gently heat the soy milk until steaming but not boiling, then froth until creamy. Pour over the matcha and stir. Add honey or maple syrup to taste, if desired.

Judy’s top tip: “Please don’t attack good matcha with boiling water. You want to coax out its delicate, grassy flavour, not punish it.”

Recipe 2: Spiced Butternut Squash Soup

When the days start getting darker earlier, Judy wants something “velvety, golden, warming and comforting without being heavy”. Her answer is a soup built around butternut squash and carrots, with ginger, nutmeg, sage and lime cutting through their natural sweetness.“


The soup came from wanting something deeply comforting but still with contrast,” she says. “I’m always looking for that tension in a dish, sweet against sharp, creamy against crunchy, rich against fresh.”


The finishing touches are integral to that balance. Lime cream brings acidity, toasted pecans add crunch and crispy sage another layer of flavour and texture. “Healthy food should never feel like penance,” says Judy.

Ingredients:

(Serves 4–6)


For the lime cream:
  • 4 tbsp sour cream
  • 3 tsp fresh lime juice
  • Zest of 1 lime

For the soup:
  • 100g unsalted butter
  • 180g white onion, peeled and diced
  • 2 garlic cloves, grated
  • 4 thyme sprigs
  • 4 sage leaves
  • 1kg butternut squash, peeled, deseeded and cubed
  • 100g carrot, peeled and diced
  • 1.1 litres chicken stock
  • 14g fresh ginger, peeled and grated
  • 2 pinches freshly grated nutmeg
  • 100ml milk
  • 3 tsp sea salt
  • Black pepper, to taste

To serve:
  • 4–6 crispy sage leaves
  • Toasted, crushed pecans
  • Freshly grated lime zest
  • Lime cream

Method:

  1. Mix the sour cream with the lime juice and zest, then refrigerate.

  2. Fry the sage leaves in a little olive oil until crisp, then drain on kitchen paper. Toast the pecans in a dry pan over low heat for around 3 minutes.

  3. Melt the butter in a large pan over medium heat until golden and nutty. Add the onion, garlic, thyme and sage and cook for 1–2 minutes. Add the squash and carrot and sauté until lightly coloured.

  4. Add the stock, ginger and nutmeg and simmer for around 15 minutes, until the vegetables are tender.

  5. Remove the herbs and blend until smooth. Stir in the milk, gently reheat and season with salt and black pepper.

  6. Serve topped with lime cream, toasted pecans, crispy sage and fresh lime zest.

Judy’s top tip: Serve with a thick slice of chewy brown sourdough for what Judy calls “a little scarpetta to mop up every last golden bit. No soup left behind.”
